This is a special project custom made for Jose Pastor. It is comprised of mostly of Trepat, a local varietal, and some Garnacha. All vines are farmed organically in the Penedez region. There is no dosage and the wine stays sur latte for 16 months.
German Gilabert is a blend of 50% Macabeo, 30% Xarello and 20% Parellada farmed from organically grown vineyards in sand and limestone soils, with an average vine age of 30-35 years old located in Alto Penedez. The Rosat is made from the local varietal Trepat blended with a little Garnacha.Wines are fermented in stainless steel tanks and aged for almost two months on the lees before undergoing the second fermentation in bottle where it sits sur latte for 16 months. There is no dosage and all bottles are disgorged upon release from the winery.
