From 30 year old vines planted on grantic slopes ten miles from the Atlantic ocean in Pontevedra. Fermented with native yeasts in stainless steel with full malolactic fermentation, aged on the lees for 12 to 18 months in vats.
Miguel planted some vines of Caiño when his daughter was born in 2009 in a tiny, rocky plot of his vineyard. The wine ferments spontaneously without any sulphur addition in stainless steel. Malolactic is not stopped and the wine stays on the lees for 6 months.
Serea, meaning “Mermaid” in Gallego, is 100% hand-harvested Albariño from ten- to fifteen-year-old organic vines near the coast. Fermented and aged in stainless steel for three months.
