Tom (David Bowler’s Spirit Animal) has shaken, stirred, and swizzled his way across this entire country working in noted bars and restaurants (including the Zuni Cafe in San Francisco in the late 80’s.) After that he moved eastward, and following a stint in Chcago, landed in New York City 23 years ago. Here, after being trained by Sasha Petraske as part of the opening bar staff at The John Dory Oyster Bar at the Ace Hotel, Tom went on to work at several prominent watering holes throughout the city: at Milk and Honey, again with Sasha; as head bartender at the iconic “Beagle” for its all too brief—but epic— life on Avenue A; as head bartender at the opening of bar 54 in 2014 at the Hyatt Times Square, with Julie Reiner; and as head bartender at Dear Irving (which he helped to open) with Meaghan Dorman.
Tom was featured in the Fall 2015 issue of Martha Stewart Wedding Magazine as the "expert" for cocktail design for weddings, where three of his original cocktails are featured. (Sophia Bogardus was on the cover!!) He also created Tomr's Tonic— his own recipe— when the tonics available on the market fell short of what he felt tonic should be, and in 2014, also had the opportunity to travel to Jerez on the Sherry Intensive trip under the brilliant guidance of Steve Olson. Tom has also consulted on numerous cocktail programs around the country, judged a bunch of cocktail competitions (and continues to do so) and now, as the Spirits Brand Manager, continues to embrace the fact that he drinks for a living.
