Each parcel is vinified separately in steel and concrete and then aged together in a large French oak foudre and one very old French barrique. The photograph on the label is of Borja’s great-grandfather’s hands. 100% Listán Negro. Lightly clarified but not filtered before bottling.

"...composed entirely of Listán Negro, which he makes from purchased grapes and then ferments in cement and ages in a combination of one old foudre and one even older French barrique. The wine is characteristically light in color and offers up a lovely nose of dried cherries, a bit of blood orange, dried herb tones, vinesmoke, volcanic soil and sea salts. On the palate the wine is medium-full, complex and very transparent, with a good core of fruit, impeccable balance, lovely focus and grip and a long, modestly tannic and vibrant finish. This is an excellent wine."
