Beaujolais "L`Aube à Javernières"
100% Gamay. 2020 is the first vintage of L'Aube à Javernières and the first Desvignes wine to not be 100% cru Morgon. That said, the .84-hectare parcel of 20-30-year-old vines grows in deep clay soils right at the edge of the Javernières just below the Côte du Py. Viticulture and vinification are consistent across all Desvignes wines. The vines are certified-organic and harvested by hand. The fruit goes go through a semi-carbonic maceration in open-top concrete vats, with a maceration of 10 days in this case, with a submerged cap; generally Desvignes does all whole-cluster but in the case of "L'Aube", the bunches were 60% destemmed. A very small amount of sulfur is sometimes added after malo. The wine is aged in concrete and bottled in the spring following the harvest with a light, non-sterile filtration.
