60% Cabernet Franc and 40% Gamay Noir from grapes grown on the Lima silt/loam soil of their Cayuga Lake vineyard.
Vin d’été or “wine of summer” is a lighter style of red wine intended to be served chilled. The wild yeast fermentations are partial carbonic macerations with crushed grapes pumped into barrels over whole clusters, a process that promotes complex fruit flavors and freshness. The wines are aged in stainless steel barrels on the lees, blended in spring, and bottled by hand without filtering or fining and with minimal SO2 addition.
