100% Cabernet Franc grown at high elevation (nearly 3,000 feet), on volcanic loam soil. Temperatures at this altitude are a bit slower to warm up in the morning and cool off quicker in the evening, preserving great natural acidity in the fruit. Much like the Gamay, this wine is made in a very traditional way - whole clusters are foot crushed and fermented in open top vats. The grapes are then pressed into puncheons for aging and racked once before bottling. Deep red plum color. Powerful aromas of black cherry, thyme, rosemary and graphite. Medium bodied, with a nice balance of fruit, earth, acidity and tannins. 12% alcohol, 104 cases produced.
