Carolina (Caiño Blanco)
In 2002, after replanting parts of his vineyard with new vines of Albariño, Miguel left a spot bare, since it was too rocky and needed better preparation to receive new plants. Once the work on the land was done, he decided to plant Caiño Blanco, of which the family already had in a tiny plot. The young vines started to bear fruit in 2009, when his daughter Carolina was born - hence the name of the wine.
Fermented spontaneously without any sulphur addition in stainless steel. Malolactic is not stopped and the wine stays on the lees for six months. A tiny production of a unique wine. Flowery, citrusy, utterly charming.
