Chablis Coteau de Rosette


100% Chardonnay. Coteau de Rosette is a steep 1-hectare parcel with SE exposure on a hill with very little top soil over its Kimmeridgian marl sub-soil, planted by the De Moors in 1989-1990 in their home village of Courgis (a few miles from town of Chablis). The vines here ripen quite slowly. Alice and Olivier farm organically and harvest by hand. The fruit is gently pressed and fermented spontaneously with indigenous yeasts in stainless steel tanks. The wine goes through malo naturally and is aged on its lees without bâtonnage, also in a combination of steel , used foudre and used barrique. No sulfur is used at harvest or during vinification. Bottled in March 2020 (and in a rare exception, filtered due to the presence of a few grams of RS).

"The 2018 Chablis "Coteau de Rosette" comes from marn soils. This is slightly more reduced on the nose compared to the "Bel Air et Clardy," showing touches of flor, grilled hazelnuts and smoke. Quite complex and certainly intense. The palate is has impressive amplitude, and is richer than previous vintages (alcohol 14.5%), with a tangy, saline finish and bitter lemon/lemon sherbet on the aftertaste."
