"The 2008 Ployez-Jacquemart Blanc de Blancs Extra Brut is a lovely wine that spent at
least four years aging sur latte prior to disgorgement, but there is no information on when this
particular bottle was disgorged. The Ployez family barrel-ferments the vin clairs for this bottling
(in the same manner as their Tête de Cuvée, the Liesse d’Harbonville) and the ’08 is just starting
to stretch its wings and drink beautifully. The bouquet wafts from the glass in a refined blend of
pear, delicious apple, a touch of almond, chalky soil tones, brioche and a gentle topnote of spring
flowers. On the palate the wine is deep, full-bodied, pure and nicely structured, with very elegant
mousse, a fine core and excellent length and grip on the focused and classy finish. I do not know
what the dosage is here, but I would guess around two grams per liter. Fine juice that will only
improve with further bottle age. 2016-2035+."
