Champagne Solessence 7 Villages Nature

NV

50% Chardonnay, 40% Meunier, 10% Pinot Noir. This is the same wine as Solessence NV but aged for three more years, for a total of five years on its lees (for the 750mls), bottled with zero dosage. Jean-Marc makes this for shellfish, seafood, and sushi. The aromatics are provocative, the body is broad and creamy, and the finish is decidedly dry. The lot number on the back is the vintage. Production averages 325 cases. Disgorged in July 2018.

"...fascinating to taste next to the Extra Brut version. While the Brut Nature version is drier, the two wines aren't that different. Biscuit, dried pear and dried flowers are some of the many nuances that inform this expressive Champagne. The Brut Nature starts off edgy and nervous, but then gains considerable richness through the mid-palate and into the finish. All the elements are impeccably balanced. Disgorged: April, 2017."

"A chiseled Champagne, with a chalky underpinning and vivid acidity tightly knit to the mouthwatering mix of Honeycrisp apple, pickled ginger, toast and preserved lemon. A tang of salinity lingers on the finish. Disgorged April 2017. Drink now through 2021. 325 cases made, 33 cases imported. "
