97% Grenache, 3% other varietals. Pure is handcrafted from a single plot of 100-year-old vines and sandy soil, at the junction of “Grand Pierre”, “Rayas” and “Pointu” districts. Underripe stems are removed, and the wine is fermented in underground concrete vats. The wine stays on the skins for over 4 weeks, followed by a gentle extraction and in 2017 the wine was aged in stainless steel. There was not enough wine to fill a foudre following poor flower set in the spring. Bottled unfiltered.
