Pinot Noir/Côt/Gamay. From sustainably farmed, manually harvested estate vines on clay-limestone soils. The Pinot Noir portion is saignée, while the Côt and Gamay are part saignée and part whole-cluster press. Co-fermentation in tank with native yeasts only; malolactic fermentation takes places as well. The wine is aged in tank only.
