100% Chenin Blanc. From one hectare of 15-20-year-old vines on clay-white limestone soils right around the Baudry winery. The farming is certified-organic and all vineyard work and the harvest are by hand. The whole clusters are pressed slowly and gently, followed by natural settling in tank. The fermentation is spontaneous and to dryness (generally under 2 grams of residual sugar); the wine goes through malo during alcoholic fermentation. The wine is aged on its fine lees in used 500-liter demi-muids until the June after the vintage and is very lightly filtered at bottling. Sulfur usage is minimal.
