Chinon "Les Débonnaires"
Hand-harvested from 50+-year-old vines. Whole bunches are vinified naturally with indigenous yeasts and no added sulfites. Maceration in concrete vats followed by an assembly between carbonic maceration and semi-carbonic maceration.
No chemicals used in the vineyards or in the cellar.
Tasting Notes: A supple wine, gourmet, balanced with notes of ripe red fruit with herbaceous notes and silky tannins. Serve at 18° after a slight aeration; ideal with a Flemish stew, a suckling pig, or a nice plate of charcuterie.
