Côt Touraine Rouge
100% Côt aka Malbec. Valerie's vines are farmed organically and averaged 50 years of age with some up to 100 years old, on clay-limestone soils in the heart of the Cher valey of the Touraine region in the Loire Valley; hand-harvested as of the 2016 vintage. The grapes are destemmed and thrown directly into stainless steel and/or fiberglass vats. Fermentation is spontaneous with indigenous yeasts; the wine is aged in vat. It is bottled without fining or filtering. The use of sulfur is minimal, finishing at about 11 mg/liter.
