Coteaux Champenois Rouge
100% Pinot Noir. The fruit for this still red wine comes from a small estate parcel called Le Murtet in the Boulards' home village of Cormicy in the Massif de Saint-Thierry in the far north of the Montagne de Reims. As for all Boulard vines, the farming is certified-organic and biodynamic. The bunches are harvested by hand and destemmed; fermentation is in oak with indigneous yeasts with a three-week maceration and daily pumpovers. The wine is aged in new Burgundy barrels for 18 months and bottled without fining or filtering.
