100% Roussanne, aka "Roussette" locally. From vines planted in 1936 on a south-facing limestone marl slope in the Brézème vineyard. They are farmed organically (certified) and harvested by hand. The bunches are direct-pressed and fermented spontaneously and without sulfur. Part of the wine is aged in tinaja (Spanish clay amphora) and the other part in old oak barrels. Bottled without fining or filtration and with a small dose of sulfur. Fewer than 100 cases produced.
