G Punk Grignolino Ripasso (2015)
100% Grignolino. The starting point of G-Punk is Tavijn's basic Grignolino (named Ottavio for Nadia's vigneron father who still works the vines along with her mother). Nadia destems the fruit but keeps the berries whole, They are very gently pressed to avoid breaking the skins but to help kick off the natural fermentation. Maceration lasts a lengthy 2 months in steel and cement tanks with no sulfur added. For G-Punk, this Grignolino is kept on its lees for a year, then passed over (ripasso) the pomace or pressings from the 2016 vintage, which restarts the fermentation and adds more depth of fruit and body.
