One hundred per cent Gual from Finca San Juan Degollado and Finca Mazapé. Ungrafted grapevines. Gual was the first of the near-extinct native varieties from the Canary Islands that Juan Jesus recuperated. Both plots are from the northwest of Tenerife and are made of young volcanic soils with good drainage. These are some of the lowest altitude vineyards they work on. The winemaking process starts with the grapes cooled between-5oC to 0oC, avoiding oxidations. No sulphites are added. Fifty per cent ferments in stainless steel tanks and the other fifty ferments in concrete egg-shaped tanks under temperature-controlled conditions. Later ageing on its own lees. Both wines are blended before bottling.
