Il Rospo Cabernet Sauvignon
100% Cabernet Sauvignon. From a one-hectare parcel with 20-year-old vines on the original Montesecondo property. Destemmed with part pressed immediately and part macerated for a short 4-6 days; spontaneous fermentation and aging in concrete tank for a year; bottled without fining or flitration and held for six more months before release. “Rospo” is Italian for the “toad” gracing all of the labels.
