100% Cortese. Stefano Bellotti consistently ran afoul of the Gavi DOCG rules by pursuing a very natural approach to this wine. He quit submitting it in the 2015 vintage and renamed it "IVAG" (Gavi in reverse), an indication of his thoughts on the matter of conventional Gavi. Ulivi's IVAG comes from wild and beautiful vineyards, three different biodynamically farmed parcels, scattered about the rolling hills of Gavi on limestone-rich red clay soils. The bunches are direct-pressed and fermented spontaneously with indigenous yeasts and no sulfur, aged for a year in old 25-hectolier botti and bottled unfiltered and unsulfured in the spring after the vintage. IVAG's tendency toward a rich golden color and flavor tone, as well as its cloudy appearance and earthy aromas, distinguish it quite clearly from run-of-the-mill Gavi.
