"The Flying Bicycle" is another project by German Blanco of Quinta Milu and Casa Aurora in Rioja Baja. With the help of an old friend and fellow oenologist, Javier Collio, Germán sources fruit from certified organic, dry farmed vineyards in the Navarra part of the appellation. Tempranillo with a little bit of Viura from vines that are around 35 years old on a mix of clay and limestone soils. Grapes are transported to the winery, de-stemmed and fermented in cold temperatures from native yeasts. A slight maceration before the end of fermentation helps to make a delicate and fresh wine; no oak is used, and the wine stays in concrete tanks from five to six months.
