Les Roises Blanc de Blancs Extra Brut NV (2014)
100% Chardonnay. 90% 2014 base & 10% 2013 reserve.
Les Roises is a .60-hectare monopole of Ulysse Collin in its home village of Congy in the northern Coteaux du Morin. The 60-year-old vines have full southern exposure and are planted in clay topsoils with limestone-rich subsoils. As for all Collin Champagnes, the fruit is hand-harvested and pressed; the juice is lightly sulfured and settled overnight, then fermented spontaneously and slowly with natural yeasts in oak, with the reserve wine spending an extra year in barrel; the wine is bottled without fining, filtering or sulfuring and aged sur lattes for an extended period, 4 years in the case of Les Roises. The wine is disgorged and finished with a small dosage of 1-2 grams/liter at most.
