Metodo Classico Brut Nature "Terzavia"

100% Grillo. The fruit is from De Bartoli's organically farmed estate vineyard in the Samperi contrada of Marsala, planted on sandy limestone soils and averaging 25-30 years old, trained in both Guyot and alberello styles. The fruit is harvested by hand and the whole clusters are gently pressed and fermented with native yeasts. Half of the wine is aged in stainless steel and half in French oak for a year. The wine is blended and bottled, goes through secondary fermentation and spends 2 years on the lees before being disgorged by hand. There is very little sulfur (14 mg/l  in total) and no dosage.

"A total head-turner, the NV Metodo Classico Terzavia lifts up with a wild bouquet that blends dried citrus rinds with exotic florals, raw honey, candied ginger and tropical melon. It's soft-textured and savory, with gobs of minerality up front complementing depths of green apple and brown spice. This leaves the palate completely refreshed yet lingers on with an air of almond custard and inner florals. The Terzavia is sourced from thirty-year-old Grillo vines in the Marsala region of Sicily. It refines on the lees in bottle for eighteen months and finishes at a nicely balanced five grams of residual sugar. "
