Montefalco Rosso DOC
60% Sangiovese/15% Sagrantino/15% Merlot/10% Montepulciano. From biodynamically farmed, certified-organic, hand-harvested estate fruit. In general, fruit from the younger vines goes into this traditional DOC Montefalco. The different varieties are harvested and vinified separately, as their ripening times vary widely. Fermentation occurs with native yeasts and a small amount of sulfur in stainless steel tanks. Maceration lasts about 10 days. The wine is blended and aged for a minimum of 18 months in old Slavonian oak botti. It is bottled without fining, filtering or any additional sulfur and aged for 6 more months before release.
