Muscadet Sèvre-et-Maine "Monnières-Saint Fiacre"

100% Melon de Bourgogne. Pépière has vines in a couple of different zones of the cru of Monnières-St.-Fiacre (including the lieu-dit of Gras Moutons which is separately bottled). The site for this bottling features 60-year-old vines on fine, sandy, gneiss-rich soils. As for all Pépière vines and wines, the farming is organic and the harvest and all work by hand. The fruit is direct-pressed in whole clusters and the juice settled naturally for 12 hours. It is then fermented in stainless steel tanks with natural yeasts; the wine is aged on its lees for 2 to 2.5 years in large underground vats.

"The 2017 Monnières Saint-Fiacre offers ripe nectarine, apple and citrus alongside lees-derived nutty characters, having spent three years on lees. The clarity of the wine is excellent, perhaps something to do with the hand harvesting and whole bunch pressing, which puts them in the minority. It's light in body and elegant with fine sinew on the finish. Drawing this out on the long finish, it bursts with freshness and reflects the cool vintage."
