100% Pineau d'Aunis. Demi-sec, pet-nat, rosé sparkling from certified-biodynamic estate vines ranging from 10 to 50 years old. Harvested by hand, destemmed, fermented spontaneously in tank and bottled with residual sugar (20 grams/liter) to finish over the course of a year in bottle. Disgorged November 2021. 

*Note: the first vintage was a much deeper, actually red color, due to 20% Cabernet Franc in the mix. That is no longer the case.
