Oslavje Fuori dal Tempo
60% Chardonnay/40% Sauvignon Blanc. This wine is a riserva version of Radikon's Oslavje wine, made only in the very best vintages and from a selection of the most perfect fruit from those years. It was made identically to the rest of the line-up: the fruit was destemmed and gently crushed in a pneumatic press. The grapes were co-fermented spontaneously with indigenous yeasts and with no sulfur in old Slavonian oak botti; maceration lasted around three months. The wine was racked into huge botti (25-35-hectoliter) and aged on the fine lees for about 4 years (racking two times/year). The wine was bottled without sulfur and without filtration. The key distinction between the "regular" Oslavje and Fuori dal Tempo is the length of bottle aging: 3-4 for years for the former and an incredible 9 years for the riserva.
