100% Grignolino. Tavijn's Grignolino is named Ottavio for Nadia's vigneron father who still works the vines along with her mother (Teresa, for whom the Ruche bottling is named!). Nadia destems the fruit but keeps the berries whole, They are very gently pressed to avoid breaking the skins but to help kick off the natural fermentation. Maceration lasts a lengthy 2+ months in steel and cement tanks. It spends a few months on the lees and is bottled with minimal sulfur.
