Ottavio Vino Rosso
100% Grignolino. Tavijn's Grignolino is named Ottavio for Nadia's vigneron father who still works the vines along with her mother (Teresa, for whom the Ruche bottling is named). The fruit comes from multiple estate parcels in the Monferrato hills. It is destemmed but with the berries kept whole; they are very gently pressed to avoid breaking the skins but to help kick off the natural fermentation. Maceration lasts a lengthy 2+ months in fiberglass tanks. Bottled with 2 grams sulfur.
