País~Cabernet - This wine combines País and Cabernet grapes, planted in the early 1980's in different parts of the Sierra Foothills. This is the only La Onda wine with grapes blended from two separate vineyards and it's notable that both of these vineyards have been farmed organically since their inception. The idea is to make an American table wine using what Dani believes to be the two most important red grapes in North and South America, forming a connection between Dani's two projects, La Onda and Onda Brava. The Cabernet comes from Smith Vineyard and the Pais is farmed by Daniel D'Agostini in Amador county. Both are high elevation, dry-farmed sites on granitic soils. Whole clusters are foot crushed and fermented with stems, being gradually added over the course of weeks. The wine is pressed off and matured in used barrels until bottling, unfined and unfiltered.
