Pergaud Brézème Vieille Roussette Côtes-du-Rhône
100% Roussanne, aka Roussanne. From Texier's oldest Roussanne vines, planted in 1936 on pure limestone in Brézème. 2015 is the last vintage with skin maceration for this bottling: 50% of the fruit spent 6-8 weeks in amphora with skins. The other 50% was direct-pressed in whole clusters into old barrels. The separate fermentations were spontaneous with native yeasts and no sulfur. The two wines were pressed together and thus blended, then aged in a mix of Spanish amphora (tinaja) and old oak. Bottling was without fining or filtering and with a small amount of sulfur.
