Pigato U Baccan Riviera Ligure di Ponente DOC
This is a severe selection of 50-70+ year old Pigato vines mainly from the red clay "Le Russghine," vineyard as well as a small selection from the blue clay "Garaxin" vineyard with soil rich in and fossil material. Yield per plant is very low.
The grapes are destemmed and macerated on the lees for 24-36 hours. Soft pressing followed by a clarification of the must and cool fermentation at 19°C. Aged in Austrian acacia casks for at least ten months on the lees with battonage. Stabilization is done at natural cellar temperatures.
Nose of great depth and purity featuring aromatic herbs: sage, thyme as well as ripe fruit with yellow flesh, peach and mango, citrus peel, linden honey with a clear note of silica. On the palate, round with a hint of salted almond. Remarkable!
“U Baccan” means “the boss” in the local dialect, and refers to Riccardo Bruna.
