Gamay, Trousseau Noir, Trousseau Gris grapes farmed organically from three vineyards, Alpine Peaks, Bearg Ranch and Fannuchi respectively. Initially water is added to the grapes and they are soaked for two days. After being drained into steel, unfermented Chardonnay juice is added to assist wild yeast fermentation. After 5 months in stainless steel wine is bottled and the unfermented juice is added so the wine can undergo a second fermentation. 250cs produced.
