Chardonnay, Melon de Bourgogne, Vermentino, organically farmed from three vineyards - Hawkeye Ridge, Rodnick and Lodi, respectively. Initially, water is added to grape must, and soaked for two days. After being drained into steel barrels, unfermented Chardonnay juice is added to assist wild yeast fermentation. After 5 months in stainless steel, unfermented juice is added at bottling so the wine can undergo a second fermentation. No SO2. 250 cases produced.
