Varieties: Chenin must, juice of Chardonnay and juice of Colombard
Vineyards: Buddha’s Darma (Chenin), Hawkeye Ridge (Chardonnay), Ricetti (Colombard)
Winemaking: Water is added to Chenin must and punched down for 2 days. Drained into steel
barrels, unfermented Chardonnay juice added to assist fermentation (Wild Yeast Ferment).
Unfermented Colombard juice added day of bottling to start second fermentation in bottle. Zero sulfur added.
Farming: All vineyards farmed Organic
Aging: Bottled after 3 months in stainless steel barrel.
ABV: 7%. Production: 60 Cases
