80% Pineau d’Aunis/20% Gamay. Whole clusters are co-fermented, starting out carbonically in closed tanks topped with CO2 and finishing fermentation with no additional yeasts and no sulfur. Bottling takes place without filtration generally around the first of the year after the vintage.
