Pollux VDF Gamay
100% Gamay. From 6 plots of low-yielding, biodynamically farmed estate vines on flinty, sandy clay soils in the Coteaux de Loir. The hand-harvested bunches are pressed whole and ferment spontaneously, undergoing carbonic maceration for several months before pressing and aging in used barrels. 2017 was the fifth vintage of the wine (previous ones were 2009, 2011, 2013 and 2015), which is only made when the ripening conditions are suitable for Gamay.
