100% Montepulciano. Prologo was De Fermo's first wine, hence the "prologue" moniker, in the 2010 vintage. It comes from 2 of the estate's 4 parcels of certified-biodynamic vines (aged around 25 years). The Prologo fruit is hand-harvested the latest of all of the De Fermo vines/wines (usually in the first 10 days of October, then destemmed and fermented spontaneously with native yeasts and no temperature control in concrete tank. Maceration last 2-3 weeks, while the fermentation goes on for up to 2 months. The wine is aged in large oak botti for up to a year and half and is bottled without fining or filtering or additional sulfur (minimal amounts are used at racking only).
