Recioto della Valpolicella "Sant'Ulderico"
50% Corvinone, 20% Corvina, 20% Rondinella, 10% Croatina-Molinara-Dindarella. From the core Monte dall'Ora vineyard below the winery and house, where vines average 25 years old, are trained in pergola and farmed biodynamically. The bunches are selected by hand in mid-September and dried in single layers on the slats of small wooden boxes in the open-sided fruttaio attached to the house/cellar. The drying proceeds slowly and naturally and lasts about 4 months. The bunches are then destemmed, gently crushed and macerated for about 2 weeks; fermenation is spontaneous and slow with indigenous yeasts only in an oak vat. The wine is aged for 3 years in used barrique. Production is approxmately 2000 bottles. Like their amarone, Monte dall'Ora's recioto tips toward the savory and sinewy rather than the sweet and sappy side.
