Riesling Auten “Tanzen Dame” 2nd Harvest
Grapes for this 2nd harvest Riesling were picked by hand in mid-November. Botrytis development was good but not extensive, with sugar levels reaching 24° brix. The complexity in these “2nd Harvest” wines is increased through “overnight pressings” where grapes are left in the press for up to 12 hours; this skin contact gives wines with more color and weight. Wild-fermented and bottled filtered, but not fined with minimal SO2 added.
