Like all of Hoch's wines, the goal is to "bottle nature"; fermentations are spontaneous, no sugar or enzymes are added, only a low amount of sulfur at bottling. All fermentation and aging happens in neutral French oak barrels. This is a blend of three vintages. The Riesling is grown on the Hollenburger conglomerate soil, which is a limestone rich Alpine formation. This riesling is pure and intense, with racy acidity, tangy citrus fruits, and mineral.

"Straw to golden-yellow in color, Christoph Hoch's NV Hollenburger Riesling blends the vintages 2018, 2017 and 2016 to a pure, lean and fresh white that is more ascetic and lean on the nose than the corresponding Grüner Veltliner. Lean and mineral as well as elegant and fine on the palate, this is a medium-bodied, tight and bone-dry Riesling with a silky texture and lingering fine grip. Still austere at this stage, but this 12% alcohol Riesling should be an excellent wine with some years of bottle age. "
