Riesling Trocken "Koberner"
Kobern is located between the towns of Winningen and Lehmen, and the soils here are a very fine, pure, dark blue slate. This site is highly weathered with a very thin soil base, which causes the vines to root very deep into the soil in search of water during the summer, thus tapping into a different soil profile. The vineyards face south-southeast.
Four to eight hour maceration on skins, natural settling by gravity, spontaneous fermentation, no chaptalization, no fining, no additions or reductions of any kind. The wine develops 11 months on lees in stainless steel tanks; filtered and sulphured minimally before bottling.
