Rosé L'Epatant Antidote
100% Malbec (aka Auxerrois in local parlance). The full name on the label is "Formule Secrete: L'Epatant Antidote à la Chaleur du Causse" is indicative of the Ilberts' intention to craft a refreshing rosé to counter the extreme heat of the Causse plateau and surrounding river plain of Cahors. That said, this is a full-bodied, deeply colored rosé, which is not surprising coming from this hot climate and the dark Malbec grape. The fruit comes from 1 hectare of low-yielding vines (25 hl/ha) on clay-limestone soils on the Causse at 320m in elevation.
