In the cellar, the vinification is semi-carbonic and lasts between 12 to 15 days. A weighted grill keeps the cap submerged in the fermenting juice, which gives a very gentle extraction of tannins. The wines are aged in cement tanks.

"The 2021 Saint-Amour from Domaine des Billards is a beautiful wine in the making. It is utterly classical in personality this year, tipping the scales at an even thirteen percent alcohol and offering up a deep, sappy and youthful bouquet of red and black cherries, cranberries, fresh thyme, woodsmoke, gamebird, dark soil tones and a topnote of peonies. On the palate the wine is deep, pure, full-bodied and structured out of the blocks, with a fine core of fruit, excellent soil undertow and grip, ripe tannins and a long, complex and very well-balanced finish. This wine is one of the finest, long-distance runners in all of Beaujolais and the 2021 vintage will easily last four or five decades in bottle, so there is no hurry to start opening bottles! I would plan to let it hibernate for three or four years before checking in on it."
