Savennières Les Caillardières
100% Chenin Blanc. Caillardières is a single-vineyard bottling from 35-year-old vines on a windy plateau with sandy soils over schist. Like the rest of the Closel vines, they are certified-biodynamically farmed, low-yielding (16 hl/ha in 2018) and harvested by hand. The harvest is at least two weeks after that of the Jalousie fruit, and there is generally a small amount of botrytis. The fruit is directly pressed as whole clusters, then fermented with native yeasts and a small amount of sulfur in tank. The wine is aged about 14 months in mainly-used 400-liter French oak barrels and finishes with a few grams of residual sugar (5 grams along with 4.1 grams of acidity in 2018). Given its later harvest, botrytis component, wood aging and residual sugar, Caillardières is naturally broader and richer yet at the same time intensely mineral- and acid-forward versus La Jalousie.
