Savigny-lès-Beaune 1er cru Les Lavières


Mid-slope and predominantly limestone. Lavières comes from the word "lave" which in this case has no volcanic reference, but was the term used in the past to describe the flat limestone tiles used to cover the roofs. In fact, these famous stones are found here in the sub-soil. The vines are more than fifty years-old and are situated in the finest part of the appellation. Fermented with 70% whole cluster.

Finer-boned and more energetic than the Fourneaux that preceded it, this is very promising."

"The 2018 Savigny-lès-Beaune Les Lavières comes from south-facing mid-slope vines on mainly limestone soils. It has a very attractive bouquet of raspberry and wild strawberry aromas, quite plump and generous, yet well defined. The palate is medium-bodied with chalky tannins and precise red berry fruit laden with minerals, leading to a slightly reserved but very persistent finish. This is a notch (or two) up from the Aux Fournaux at this stage."

"There is a bit of post-bottling reduction so if you're tempted to try a bottle in its youth, I would advise decanting it first. Otherwise there is both good energy and freshness to the detailed, mineral-infused and more refined flavors that exhibit fine length on the youthfully austere finale. This possesses fine aging potential and is a wine that will need at least some patience."
