Syrah "El Dorado"
Hank had been experimenting with small lots from various Syrah vineyards in his area, exploring the varied terroirs of El Dorado County. Over the last couple of years he produced an interesting assortment of Syrah wines from 2015 and 2016. The idea struck him that a compilation of these wines and vineyards would give an interesting look at the home county. This non-vintage bottling embodies Syrahs from two main soils types in El Dorado - granite and volcanic. Whole cluster fermented and aged in a variety of vessels. Bottled unfined and unfiltered with minimal added sulfites. 245 cases made. 12.3% alcohol. Stelvin closure. The blend shows aromas of black cherry and vanilla, some smoke and meat. There is bold, smoky, savory fruit in the mouth. Definitely some tannins in the finish, some tarry and olive notes, with very pleasant acidity and length. Pair it with more robust stews and meat dishes, or boldly flavored vegetarian meals.
