Syrah/Roussanne/Marsanne "Wax on, wax soif"
80% Syrah, 15% Roussanne, 5% Marsanne, cofermented with a small amount of whole cluster. The fruit comes from Mae's Vineyard and Steelhead Run Vineyard in Applegate Valley AVA - granite and river sedimentary soils.
Daily punchdowns, pressed off the skins after 12 days. From there, the fermentation finished in stainless steel, and then was moved to neutral french oak for 9 months.
